Mediterranean Salmon Packets

What’s your New Year’s resolution? We all say the same thing…lose weight/be healthier. Sure, we would all love to look like a Victoria’s Secret model but no one wants to eat a boring salad every single day! This is such a healthy dinner option and so easy to prepare (and clean up). It’s a very forgiving recipe, so if you don’t have the exact measurements for everything that’s okay, if you have more ingredients (such as olives, potatoes, onions, parsley) and want to add them, great! Salmon is filled with Omega-3, which is essential for heart health, lowering cholesterol and high blood pressure, helps with blood flow, therefore aiding in strokes and clots, and brain health. It’s a superfood for a reason! So not only is this recipe tasty, you can feel good about your New Year’s resolution while eating it.

Yield: Serves 2

Ingredients:

  • 1 pound of salmon (2 filets – ½ pound each)
  • 1 tbsp capers
  • 2 garlic cloves, finely chopped
  • ½ cup shallot, thinly sliced
  • 16 grape tomatoes, cut in half
  • ½ tsp oregano
  • ½ cup vegetable broth
  • 2 tbsp olive oil
  • 2 pats of butter (optional)
  • a few slices of lemon
  • ½ tsp salt
  • pepper to taste

Preparation:

Preheat the oven to 350°. Place one filet of salmon on a piece of tin foil (big enough to wrap around the salmon) and add in half of every ingredient. Place the second piece of salmon on a different piece of tin foil and add the remaining half of each ingredient. Wrap each piece up into a little packet to hold in all the juices. Place both packets on a sheet tray (I find this easiest) and bake in oven for 20 minutes. Serve in or out of the foil packets with rice or orzo. Enjoy!
